Does anyone have any suggestions for me? I want quick, easy and tasty!

We are not veggies by heart but we are trying to eat more veggie meals in the week and cut down on carbs as much as possible in our evening meals because we eat late due to working late.

I'm a vegetarian but not sure you would like this.I try to have some little chunks of tofu in a salad as a sub for chicken.You can buy tofu in 1 lb blocks and cut it up into small blocks and stir fry a day or two ahead of time in soy sauce(preferably in a wok but if not you will have to use something non stick)store it in the fridge and add to a salad like you would pieces of chicken for a chicken salad.I use this stuff called liquid aminos instead of soy sauce,because it's much healthier and takes exactly like soy sauce. You can add a light dressing to this salad(I sometimes use vinagrette or balsamic vinegar).I find this filling for me but my stomach is shrunk.Just a little something to start you off :)

I do a fair amount of fake meat, for the protein. You can get fake burgers, chicken patties, sausages, chicken strips, etc. I just bought a bunch of the chicken strips so that this weekend I can make curry/enchiladas with them and have plenty of food for the week. If I'm being extra-lazy, I nuke a couple chicken patties for about 2min, add some ketchup, and there's dinner. ;) I don't know that I'd recommend it, though, as it's definitely quick and easy but probably not very balanced/healthy.

Thanx ladies!

I have just had a meal suggestion from the girl in my office who has told me to make veggie quiche without the pastry.

Apparently i need to sweat some leeks and onions and grate a small amount of cheese, then divide and put into ramekin dishes so they are half full. Then add 1 or 2 beaten eggs ( mixed with a splash of milk ) in each ramekin. Lots of salt and pepper and some mixed herbs and bake in the oven on a medium heat until cooked through. Serve with salad.

Apparently this is very quick so will be giving it a try tonight. :)

All the veggie dishes I find seem to contain lots of cheese :(

Cool :) you may want to look up some vegan sites for quick veggie dishes without eggs or cheese.They can be tasty too and filling :)
