One of my coworkers was given a huge basket of them and has no idea what to do with them all...anyone have something more than my suggestion of lemonade or pie??

Oh, those lemon bars are phenomenal, I love them too! You could also make lots of pancakes with lemon and sugar, use them for cleaning or lightening hair, make lemon chicken, lemon pepper, etc etc.

Lemon drizzle cake!

Chicken piccata!

You can make cucumber-chili yoghurt dip with lemon juice that's great...
just peel and deseed a cucumber, deseed and finely chop a red chili and add the juice of half a lemon to some plain yoghurt. It's good with pita, or you can top a naan bread with some chicken sauteed with a spoonful of curry paste and the yoghurt on top.

This is so good! I never had lemon pepper when I've made it before, so I always used lemon juice and pepper.

I use lemon to make fajitas... Just saute onions, peppers (plus mushrooms or any other veggies you're into), chicken, the juice of 1 lemon (sometimes 1 1/2 to 2, depending how many people you're cooking for), plus tons of seasoning (I use salt, pepper, paprika, chili powder, some cumin, coriander). The lemon makes it really moist and adds a nice flavor.
